We source single-origin coffees from farms that practice sustainable agriculture, then roast them in small batches here in Northeast Washington so every cup tells the story of its origin.

Our Story

We believe coffee
deserves patience.

Gigis Coffee Roasters began with a simple conviction: that exceptional coffee should never be an accident. Every batch we roast is a deliberate act of attention — from the moment green beans arrive at our roastery on Central Avenue NE, through the careful development of each profile, to the final packaging that preserves the character we've worked to create.

We work directly with farming cooperatives in Ethiopia, Colombia, and Guatemala, paying premiums that reflect the quality and care they bring to every harvest. Our roastery in Northeast Washington is where those relationships become something you can taste — a cup of coffee that carries the specificity of its origin in every sip.

to cup.

Sourcing

We travel to origin each season, meeting farmers and tasting at the source. Only lots that meet our standards move forward.

Roasting

Each origin receives a custom profile developed on our 5 kg roaster. We roast small — enough to preserve freshness, not so much that we lose attention.

Cupping

Every batch is cupped against our reference standard. We record flavor notes, acidity, body, and sweetness — then decide whether it earns the Gigis name.

04

Delivery

We roast midweek and ship within 48 hours. Bags are packed with one-way valves that lock in freshness without letting oxygen in.
